    Paradise Pumpkin Pie
    Bonnie G. Griffin Smith
    Ingredients:
    Part 1:
    8 oz. Cream Cheese
    ¼ C. Sugar
    1 Egg
    1 tsp. Vanilla
    1 Unbaked Pie Shell

     Part 2:
    2 Eggs (slightly beaten)
    1 C. Evaporated Milk
    Dash of Salt
    ¼ tsp. Nutmeg
    ¼ tsp. Ginger
    1¼ C. Pumpkin
    ½ C. Sugar

    Directions:
    Preheat oven to 350° and bake for 1 hour.

    Part 1: Combine cream cheese, ¼ cup of sugar, ½ teaspoon vanilla and 1 egg. Mix well. Spread in bottom of pie shell.

    Part 2: Combine the remaining ingredients and mix well. Carefully pour over cream cheese mixture.
